香港從來不是一個咖啡生產區域,但仍適合種植某些品種,如阿拉比卡卡圖拉。位於粉嶺的OFarm於2001年偶然開始種植咖啡樹。2020年,seedtocuphk 啡農開始嘗試處理收成並探索在香港種植的咖啡風味。
IMO代表原生微生物,用於有機農業以增強植物施肥的效果。當我在農場工作並處理咖啡時,我會將微生物與糖和紫蘇葉結合在瓶子裡,製作IMO。這個紫蘇葉有助於抑制有害細菌並提高IMO的生長成功率。
同樣的原理也適用於咖啡處理,它通過在咖啡發酵過程中添加紫蘇。與香港傳統的水洗過程相比,這樣處理出的咖啡具有純淨的風味。
Hong Kong was never a coffee production region, but it is still suitable for growing certain varieties like arabica caturra. Located in Fanling, OFarm began planting coffee trees by accident in 2001. In 2020, a new brand called seedtocuphk 啡農 attempted to process the harvests and explore the flavor of coffee grown in Hong Kong.
IMO stands for Indigenous Microorganism, which is used in organic farming to enhance the effectiveness of plant fertilization. When I worked as a farmer and processed coffee, I would create IMO by combining microorganisms with sugar and shiso leaves in a bottle. The shiso helped suppress harmful bacteria and improve the success rate of growing IMO.
The same principle applies to this special coffee processing. It involves reproducing microorganisms through fermentation by adding shiso to the coffee fermentation process. The result is a cleaner flavor compared to the traditional wash process in Hong Kong.
