Coffee Harvesting and Processing Workshop (October to January)
The journey of coffee from seed to cup is an exciting adventure. The harvesting and processing stages have a decisive impact on the final flavor of the coffee. Harvesting is the crucial first step—coffee cherries must be picked when they are fully ripe to ensure the best flavor.
The post-harvest processing is equally important. Common processing methods include sun drying, water washing, and honey processing, each of which imparts unique flavor characteristics to the coffee. During the processing stage, the fermentation process is particularly crucial—properly controlling the fermentation time and conditions can enhance the complexity and uniqueness of the coffee.
Although Hong Kong is not a traditional coffee-growing region, by understanding the growth cycle and environmental needs of coffee trees, and finding suitable microclimate areas, we can still cultivate high-quality coffee locally.
